Southwest Chipotle Hummus

1 clove garlic
15 ounces soybeans, canned, rinsed and drained
3 tablespoons tahini, more to taste
2 tablespoons lemon juice, freshly squeezed
1 tablespoon olive oil
1 teaspoon chipotle chile canned in adobo, finely chopped
1/2 teaspoon cumin powder, more to taste
2 tablespoons chopped pimientos, drained
1/4 cup chopped cilantro, stems removed
6 ounces garlic bagel chips

In a food processor, mince the garlic clove. Add the soybeans, tahini, lemon juice, olive oil, chipotle, and cumin. Process until smooth. If it is too thick, you can add a tablespoon of water at a time until you reach the desired consistency.

Add pimientos and pulse until they are chopped and blended in with the hummus.

Transfer the hummus into the serving bowl and stir in the chopped cilantro. Serve with garlic bagel chips or pita bread.
