Oven at 375 F. You will need a 12 cup muffin pan, greased or lined with paper baking cups
1 ½ cups flour
½ cup soy flour
1 Tbs sugar
1 Tbs brown sugar
4 tsp baking powder
1 tsp cinnamon
1 tsp nutmeg
1/4 tsp ground cloves
½ tsp salt
1 cup soy milk (vanilla or plain)
4 TBSP butter, melted
2 eggs
1 cup canned pumpkin
Mix dry ingredients and set aside.
Beat eggs until fluffy. Add milk, butter, and pumpkin to eggs and mix until blended.
Add liquid mixture to dry mixture and blend only until moist.
Spoon batter into muffin cups to about 3/4 full. Bake 15 – 20 minutes. Muffin tops should be brown when done.
Makes 12 muffins.
