The recipe for the tarts is a basic one that can be used with a variety of fillings. You will need a mini muffin or mini tart pan (with 1 3/4″ cups) and mini baking cups.
Oven at 325 degrees
½ cup butter, softened
3 oz soy cream cheese, softened (Tofuti is a great brand)
1 cup flour
Filling recipe follows
Beat butter and cream cheese. Stir in flour. Cover and refrigerate 1 -2 hours.
Shape into 1″ balls. Place each ball into an ungreased mini baking cup. Press so that the dough covers the bottom and goes up the sides of each baking cup.
Fill each tart with 1 tsp of the filling (recipe below). Bake for 25 minutes. Cool slightly in pan, then remove and cool on a wire rack.
Makes 24 mini holiday tarts
Filling:
1 egg
3/4 cup packed light brown sugar
1 TBS melted butter
1 tsp vanilla extract
½ cup chopped pecans
Beat all ingredients except pecans until blended. Add pecans and mix.
