1 lbs fresh green beans
1 medium red onion, diced
6 oz soy bacon (usually made from Tempeh), diced
1 Tbs olive oil
In a medium saute pan, heat the olive oil. Add the diced onions and saute for 3 minutes. Add the tempeh and saute for another 3 minutes, or until the onions are tender and the bacon brown.
Meanwhile, wash the green beans and add to a medium pot with a tight fitting lid. Add 1/4 cup of water and steam the green beans until tender, approx. 10 minutes. Drain and add to the onion and bacon mixture. Stir well and heat for 1 more minute. Serve immediately.
