This is a great Bolognese Sauce. It can be used in lasagna, baked pasta dishes or over your favorite pasta. I always have the ingredients on hand for an easy sauce that is not only packed with soy protein, but tastes great. This is another kid-friendly recipe!
42.5 oz crushed tomatoes (one 28 oz can and one 14.5 oz can)
8 oz Italian soy crumbles
1 tsp oregano
1 tsp basil
1 tsp thyme
½ tsp garlic salt
1 tsp onion powder
1 large bay leaf (or 2 small)
Add the tomatoes and all seasonings to a medium sauce pot, bring to a gentle boil, lower heat and simmer for 1 hour (simmering this long takes some of the acidity and bite out of the tomatoes). Stir about every 15 minutes.
Add soy crumbles and simmer for another ½ hour on very low heat – stir about every 10 – 15 minutes.
Remove the bay leafs and use in recipe or serve over your favorite cooked pasta. This is a very easy and taste sauce for spaghetti – always a favorite among the younger crowd!
Makes approx. 4 cups sauce.
