A tasty and easy way to add some soy to your child’s diet!
Oven at 325 F
For the Filling:
8 oz soy crumbles, taco flavored or plain (if using taco flavored omit the seasonings below)
1 can whole tomatoes, chopped (reserve the liquid)
2 tsp cumin
2 tsp garlic salt
2 tsp onion powder
1/4 tsp chili powder, optional
4 flour tortillas
1 cup shredded lettuce or fresh spinach
1 cup diced tomatoes
1 cup shredded Mexican style or colby-jack cheese (dairy or soy)
To prepare the filling, heat the oil in a medium to large saute pan. Add the soy crumbles and heat for 1 minute. Add the tomatoes, reserved liquid, and the seasonings. Cook for 15 minutes on very low heat.
Meanwhile chop the lettuce and tomatoes.
To assemble the burritos, place 1/4 cup of filling near one edge of the tortilla. Top with 1/4 cup each of lettuce and tomatoes and slightly less than 1/4 cup cheese. Fold edge closest to the filling up and over the filling until the mixture is covered. Fold in the two sides – like an envelope. Roll the tortilla up.
Place seam side down in your pan and top with the remaining cheese. Bake for approx. 10 minutes – until cheese is melted.
Top with plain yogurt, sour cream, or salsa if desired! Makes 4 burritos.
