I call this Michigan Apple Crisp because I used to make this with apples picked the day before from a nearby orchard. Our family had so much fun picking the apples and just as much fun reaping the rewards. Alas, I no longer live there so I use apples from my local store.
Oven at 375 F
4 large tart apples (Granny Smith, Golden Delicious, Rome all work well)
3/4 cup packed light brown sugar
1/4 cup flour
1/4 cup soy flour (this will add a nice nutty flavor)
½ cup quick-cooking oats
3 Tbs butter (dairy or soy margarine), softened
½ tsp cinnamon
1/4 tsp nutmeg, optional
Extra butter for the pan (about ½ Tbs)
Butter a 9 x 9 pan – bottom and sides.
Place the diced apples in the pan. Mix all other ingredients together and sprinkle over the apples.
Bake 30 minutes, or until the top is brown and the apples are tender. Allow to cool slightly – it is best served warm. You can serve with whip topping or try one of the tofu “ice creams”.
