1/2 cup dates, finely chopped
1/2 teaspoon baking soda
3/4 cup boiling water
1 cup flour
1/8 teaspoon nutmeg, ground
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup soy margarine
1/4 cup sugar
1 egg
1/2 teaspoon vanilla
1/4 cup sugar
1/4 cup soy anytime
3/4 cup semisweet chocolate chips
Oven at 350 degrees. Lightly spray or butter a springform pan or 8×8 pan.
Toss the dates and 1/2 a teaspoon baking soda together. Add the boiling water and allow to sit at least 20 minutes.
Stir together the flour, nutmeg, baking powder, other 1/2 teaspoon baking soda, and salt. Set aside.
With a mixer, cream the soy margarine and sugar. Add the egg and vanilla and blend. Pour in the date mixture (with the liquid) and mix. Add the dry ingredients and mix until well blended.
Pour the batter into the prepared pan. Top with the 1/4 cup sugar, soy anytime and chocolate chips. You can either add each topping separately, or mix the three together and top all at once.
Bake for 25 – 30 minutes, or until a toothpick inserted in the center comes out clean (try not to stick the toothpick in a chocolate chip).
