A variation of a recipe from Family Fun, this tasty family treat uses soy margarine and soy yogurt – both of which can be found at your local health food store. This would be perfect for a lunch box or after school treat.
Oven at 300 degrees
2 cups all-purpose flour
1 tsp baking powder
½ tsp baking soda
½ tsp salt
½ cup soy margarine, room temperature
1 cup sugar
2 eggs, or equivalent egg substitute
1 tsp vanilla
1 cup mashed ripe banana (about 3)
½ cup plain soy yogurt (or plain dairy yogurt)
½ cup chocolate chips, semi-sweet, milk chocolate or a combination of the two
Spray a 9 x 5 loaf pan with cooking spray – set aside.
In a medium bowl, sift the flour, baking, powder, baking soda and salt – set aside.
Cream the soy margarine, and gradually add in the sugar and eggs (one at a time) or egg substitute, and vanilla – set aside In a third bowl, mix the banana and yogurt until blended.
Now, alternate adding the dry (flour) mixture and the banana mixture into the soy margarine mixture – mix about 1/3 of each mixture into the soy margarine mixture at a time. This will keep the batter from getting lumpy. Once all three mixtures are combined, fold in the chocolate chips.
Scrape the batter into the prepared loaf pan and smooth the top. Bake for about an hour, or until a toothpick inserted in the middle comes out clean. If the bread starts to brown too much before the batter is cooked, tent aluminum foil over the loaf. Allow to cool on a wire rack for 10 – 15 minutes, remove loaf from pan and continue to cool thoroughly before slicing.
Makes 10 slices.
