Who doesn’t like cupcakes? And with the added bit of soy, they are tasty and good for you!
Oven at 350 F
1/4 cup sugar; and ½ cup sugar
3/4 cup mashed banana (using ones that have already started to brown is better)
1/4 cup butter, softened
2 eggs
1 tsp vanilla
½ cup flour
½ cup soy flour
1 tsp baking powder
1/4 tsp salt
1/4 cup soy milk, plain or vanilla
1/4 cup plain yogurt

Beat ½ cup sugar, butter and vanilla until well blended. Add eggs and blend.
Meanwhile, mix the 1/4 cup sugar and banana and add to the egg mixture, beating until well blended.
Combine flour, soy flour, baking soda and salt and stir until well blended. Add dry mixture to wet mixture and stir – about ½ cup at a time. Line a muffin pan with paper baking cups. Spoon mixture into each liner. Bake for 20 – 25 minutes, until a toothpick inserted in the center of a muffin comes out clean.
Cool and top with cream cheese frosting (recipe follows). As an alternative to the frosting, you can sprinkle powdered sugar on top of the cooled cupcakes.
Cream Cheese Frosting
1 ½ cups powdered sugar
½ cup soy cream cheese
½ tsp vanilla
1 Tbs finely chopped roasted soynuts
Beat the powdered sugar, cream cheese and vanilla just until blended. Frost each cupcake and sprinkle with chopped soynuts.
