Oven at 375 F. You will need a 12 cup muffin pan and 12 baking liners (cupcake liners)
Streusel Topping
1/3 cup packed brown sugar
1 Tbs flour
1 Tbs soy flour
½ tsp cinnamon
2 ½ Tbs butter, softened
Muffin Batter
1 cup flour
½ cup soy flour
1/4 sugar
2 tsp baking powder
½ tsp cinnamon
½ tsp nutmeg
1/4 tsp salt
2 large apples, peeled and shredded (approx 1 1/4 cups)
1/4 cup vegetable oil
½ cup vanilla soy milk
1 egg
For the topping, mix all ingredients until it resembles crumbs. Set aside
For the batter, mix all dry ingredients. Make a well in the center of the dry mixture and add the egg, milk and oil. Blend until the mixture is moist. Stir in the apples.
Place liners into muffin tin (you do not have to use liners, but as these muffins are somewhat crumbly I strongly suggest using some. Otherwise, grease the unlined muffin pan).
Pour batter into liners to about 3/4 full. Top with streusel topping and either use your finger or a spoon to lightly tap topping into the batter.
Bake for 17 – 20 minutes (depends on your oven, but you want a toothpick or knife to come out just barely dry)
