A delicious way to start your day.
Oven at 375.
1 cup soy milk
1/4 cup applesauce, unsweetened
2 tablespoons vegetable oil
1 egg
1 1/2 cups flour
1/2 cup soy flour
1/4 cup sugar
1/4 cup light brown sugar — packed
3 teaspoons baking powder
1/2 teaspoon salt
2 Granny Smith apples — peeld and shredded (1 cup)
1/2 teaspoon cinnamon
Streusel Topping:
1/3 cup Soy Anytime
2 tablespoons soy margarine — or butter
3 tablespoons flour
2 tablespoons light brown sugar — packed
1/4 teaspoon cinnamon
For the streusel topping mix the Soy Anytime, soy margarine, 3 tablespoons flour, 2 tablespoons light brown sugar and 1/4 teaspoon cinnamon – use a pastry cutter or fork to cut the margarine into the other ingredients until you have a crumbly mixture. Set aside.
For the muffins mix the milk, shredded apples, oil, applesauce, and egg until well blended. Add the flour, soy flour, sugar, baking powder, salt and 1/2 teaspoon cinnamon – mix until moistened.
Divide batter among 12 muffin cups and sprinkle with about 2 teaspoons streusel topping. Bake for 20 – 25 minutes, or until light golden brown. Immediately remove from muffin pan and allow to cool (or serve warm).
