This recipe is great for a casual gathering of friends and family.
1 cup Granny Smith or other baking apple, peeled and diced
1 1/2 cups whole wheat flour (whole wheat pastry flour works best, but whole wheat will also work)
½ cup soy flour
½ tsp salt
1 tsp cinnamon
½ tsp nutmeg
½ tsp cloves
½ cup maple syrup
½ cup vegetable oil
½ cup chopped nuts (walnuts or pecans)
½ tsp cinnamon
2 Tbs maple syrup
1 tsp vegetable oil
Lightly grease and flour a 8 x 8 or 9 x9 pan.
For the topping – mix nuts, ½ tsp cinnamon, 2 Tbs maple syrup and 1 tsp vegetable oil together. Set aside.
Add all dry ingredients in a bowl and mix well. Add all wet ingredients to another bowl and mix well. Add wet ingredients to dry ingredients and mix again!. Add mixture to baking pan. Place topping over cake batter – you may have to press in with your fingers a little.
Bake for 40 – 45 minutes. Cool and serve. Serves 12 – 16, depending on the size pan you use.
