Adapted from a Recipe in the 2001 Soyfoods Guide.
What could be better than homemade pretzels fresh from your oven on game day? How about getting your kids in on the fun?
Oven at 350 F. You will need one or two baking sheets for the pretzels.
2 ½ cups flour
1 1/4 cup oats
1 cup soy flour
2 Tbs sugar
1 package quick-acting dry yeast
1 ½ tsp salt
3/4 cup soy milk
3/4 cup water
2 Tbs margarine (or butter)
Kosher salt to taste
In large bowl, combine 1 cup of the all-purpose flour with oats, soy flour, sugar, yeast and salt. Mix well. In small saucepan, over low heat, heat soy milk, water and margarine until hot. Add to flour mixture and beat 3 minutes. Stir in enough remaining flour to form soft dough that pulls away from the sides of the bowl.
Knead on a floured surface until smooth and elastic. Cover loosely with plastic wrap and let rise 10 minutes. Divide the dough into 24 pieces. Roll each piece into a 12″ rope. Shape into the letters of the alphabet (kids can also have fun making different shapes, including pretzel twists, animals and geometric shapes).
Place on a lightly greased baking sheet and cover loosely with plastic wrap. Let rise 10 minutes. Brush pretzels with beaten egg and sprinkle Kosher salt on top. Bake 15 – 20 minutes or until golden brown. Cool slightly before serving. Great with plain or spicy mustard or melted soy cheese!
