This may seem a strange way of making cake, but it works! It has a great chocolate taste, but is very light – perfect for a lunch box dessert or after school snack.
1 cup flour
½ cup soy flour
3 Tbs sifted cocoa
1 tsp baking soda
1 cup white sugar
½ tsp salt
5 Tbs vegetable oil
1 Tbs white vinegar
1 tsp vanilla extract
1 cup soy milk, vanilla or plain
In a large bowl, mix flour, cocoa, baking soda, sugar and salt. Make three holes in the mix.
In one hole, add the vinegar. In the second hole, add the oil. In the third hole, add the vanilla. Pour the milk over everything. Mix all ingredients until there are no more lumps. Pour into a 9 x 9 baking pan (greased or ungreased).
Bake for 30 minutes, or until a toothpick comes out almost clean. Cool and serve. This cake is great without icing, but you can top with your favorite frosting or powdered sugar. This recipe is also great for cupcakes.
