Try this tasty appetizer – it is very easy to make and great as a dip or sandwich spread – perfect fare for a party.
3 garlic cloves, peeled
1 can white soybeans (15 oz)
3 Tbs lemon juice
2 Tbs tahini (sesame-seed paste can be found in Asian markets and some grocery stores)
½ tsp salt
1/4 tsp cumin
Drain the soybeans, but reserve the liquid. Mince garlic in the food processor.
Add soybeans, 2 Tbs lemon juice, 1 Tbs of the reserved liquid from the soybeans, tahini, salt and cumin and puree until smooth.
Taste and add more lemon if desired or more of the reserved liquid until you have a smooth paste. If you are using the hummus as a dip, you may want to add a little more liquid. For a sandwich filling, you may want a slighter thicker spread.
Serve with warm pita bread, tortilla chips or crackers.
